Dragonfruit Pitaya Bowls Recipe

Gorgeous bright pink dragon fruit pitaya bowls are packed with antioxidants and are gluten-free, paleo, & vegan. The recipe makes the perfect healthy snack or breakfast.

Ingredients

  • 12 oz. frozen Pitaya (Dragonfruit) puree or cubes
  • 1/4 c. coconut water
  • 1 banana, sliced
  • 1/2 c. chopped mango or 1/4 cup mango puree (recipe below)
  • 1 kiwi, peeled and sliced
  • Handful of raspberries
  • 1/4 c. pomegranate seeds
  • 2 tsp. chia seeds
  • Toasted coconut flakes

Instructions

How to make a dragonfruit smoothie bowl:

  1. Puree the pitaya and coconut water in a blender.
  2. Top with banana, mango chunks or puree, kiwi, raspberries, pomegranate seeds, chia seeds, and coconut flakes.
  3. To make the mango puree: heat 1/2 cup fresh or frozen chopped mango in a small saucepan over medium heat until the fruit breaks down and forms a puree.

Tip – You can add whatever you have on hand for your smoothie bowls! Try other fresh or frozen fruit, granola, almonds, or chia seeds.
