Massaged Kale Salad with Shaved Parmesan

A massaged kale salad recipe with shaved parmesan and balsamic that is easy to eat and easy to customize with whatever you have in the fridge! Recipe is gluten free with vegetarian option.


  • 1 large bunch of curly or lacinto kale, center ribs discarded (about 1015 leaves)
  • 1/2 teaspoon salt
  • 2 tablespoons lemon juice, about 1 lemon
  • 1 cup chopped radicchio
  • 3 tablespoons good quality olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cloves garlic
  • 3 tablespoons high quality balsamic vinegar
  • 1 cup grated parmesan cheese
  • 3 ounces prosciutto (optional)
  • Salt and pepper to taste


  1. Thinly slice the kale and then sprinkle with salt and lemon juice. Massage for 1-2 minutes until the leaves darken and begin to soften. Drain any liquid that has been released. Add the radicchio, oil, cheese, crushed red pepper flakes, and vinegar and toss to coat. Season with salt and pepper to taste.
  2. If using, slice the prosciutto and fry until crispy. Toss with kale mixture.
  3. Serve with additional parmesan cheese and a drizzle with balsamic vinegar.
