Mixed Fruit Cobbler with Brown Sugar Ice Cream

A super easy fruit cobbler recipe with peaches, cherries and berries that takes 20 min to make! It’s a total crowd pleaser and makes a great dish to pass. Don’t forget to top it with brown sugar ice cream.

Mixed Fruit Peach Cobbler Ingredients:

  • 6 peaches, sliced and pitted
  • 4 plums, sliced and pitted
  • 1 cup blueberries
  • 1 cup cherries, pitted
  • 1 tablespoon lemon juice
  • 1 tablespoon corn starch
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg

Cobbler Topping Ingredients:

  • 1 ⅓ cups all purpose flour
  • ⅔ cup sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into small pieces
  •  cup boiling water

Instructions

  1. Preheat oven to 425° Fahrenheit
  2. Toss fruit with lemon juice, corn starch, sugar, cinnamon and nutmeg in a large bowl. Transfer to a 13″ x 9″ baking dish. Bake for 10 minutes.
  3. Meanwhile, combine flour, sugar, baking powder, salt in a large bowl. Cut in butter using a pastry blender or fingertips. Stir in boiling water until just combined.
  4. Drop spoonfuls of the topping mixture over the warmed fruit. Return to oven and bake for another 30-40 minutes until topping is golden brown.
