A super easy fruit cobbler recipe with peaches, cherries and berries that takes 20 min to make! It’s a total crowd pleaser and makes a great dish to pass. Don’t forget to top it with brown sugar ice cream.
½ cup (1 stick) cold unsalted butter, cut into small pieces
⅓ cup boiling water
Instructions
Preheat oven to 425° Fahrenheit
Toss fruit with lemon juice, corn starch, sugar, cinnamon and nutmeg in a large bowl. Transfer to a 13″ x 9″ baking dish. Bake for 10 minutes.
Meanwhile, combine flour, sugar, baking powder, salt in a large bowl. Cut in butter using a pastry blender or fingertips. Stir in boiling water until just combined.
Drop spoonfuls of the topping mixture over the warmed fruit. Return to oven and bake for another 30-40 minutes until topping is golden brown.
