This butternut squash dip is great as a dish to pass or just to have for a healthy snack! It’s vegan and gluten-free.


  • 1 tsp. olive oil
  • 1 medium butternut squash, peeled, seeded and cubed
  • 1/2 tsp. minced garlic
  • 1 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • 1/3 c. tahini
  • 1 T. lemon juice
  • salt and pepper to taste
  • fresh veggies, crackers or pita chips, for serving


  1. Brush a baking sheet with olive oil. Spread butternut squash over in an even layer. Sprinkle with garlic, paprika and cayenne pepper. Roast for 45 minutes at 400F, tossing halfway.
  2. Process roasted squash, tahini, lemon juice, salt, and pepper in a food processor until uniformly smooth. Adjust spices as needed.
  3. Spoon into serving bowl and dust with paprika. Serve with fresh vegetables and/or crackers. Tastes great warm or chilled!
