Healthy Seed Bread Muffins

A whole grain healthy seed bread muffin recipe that is guilt-free and perfect for breakfast or with a meal. Super easy to make and delicious!

Ingredients

  • 2 1/2 cups (325 grams) bread flour
  • 1 cup (50 grams) wheat bran
  • 1 2/3 cups (225 grams) whole wheat flour
  • 1 1/4 cup (100 grams) old fashioned oats
  • 2 teaspoons kosher salt
  • 1/2 cup (100 grams) olive oil
  • 1/3 cup (100 grams) honey
  • 1 packet (8 grams) active dry yeast
  • 1/4 cup (30 grams) walnut pieces, plus more for topping
  • 1/4 cup (35 grams) pepitas (pumpkin seeds), plus more for topping
  • 1/4 cup (35 grams) shelled sunflower seeds, plus more for topping
  • 2 1/2 cups water

Instructions

  1. Combine flours, wheat bran, oats, and salt in a large bowl. Mix in the olive oil and honey until just combined and a few dry spots remain. Mix in the yeast.
  2. Stir in the walnuts, pepitas and sunflower seeds, followed by the water
  3. Spoon into a greased muffin tin, filling each one approximately level.
  4. Bake 350 degrees F for 50-60 minutes, until the outside is golden brown.
  5. Will keep for a few days in an air-tight container.
