A whole grain healthy seed bread muffin recipe that is guilt-free and perfect for breakfast or with a meal. Super easy to make and delicious!

Healthy Seed Bread Muffins - made with whole grains and SO easy!One of our favorite things to do on our trip to Cape Town, South Africa, was also one of our favorite things to do here in San Francisco – explore by eating. Cape Town is a total foodie town and we had meal after amazing meal. It was heaven. Seriously, there’s something there for everyone.

I think the best meal we had in Cape Town was at Dash Restaurant in the Queen Victoria hotel, on the waterfront. That’s right I’m naming a favorite out of the dozens of meals that we had!

Astonishingly, the service at Dash was just as incredible as their food. Absolute perfection. Attentive, warm, sincere, and friendly. We felt completely taken care of without being fussed over, which is definitely an art form.

Speaking of wine, even their wine was some of the best of our trip. Their staff had perfect recommendations to go with the dishes we selected. They were so good, we actually asked for the list and picked up a few bottles in Duty-Free on our way home!Top International Travel Lifestyle Blogger

Although every dish was our favorite, surprisingly, the little seed bread muffins that were served first really stuck in my mind. So much so, that I had to have the recipe.

I frequently ask for recipes when we’re out to eat. One of my favorite ways to remember a meal is to recreate a special dish at home.

The response for a recipe definitely runs a whole spectrum, from getting the chef’s email and then never hearing back, to our server bringing out the recipe. Sometimes the restaurant even has a cookbook, which makes things easy.

When I asked for this seed bread muffin recipe at Dash though, something new happened. The chef himself brought the recipe out to our table, handwritten on a piece of hotel stationery. Can you believe it!?Healthy Seed Bread Muffins - made with whole grains and SO easy!

If you’re looking for a great fine dining restaurant with amazing service in Cape Town, check out Dash Restaurant in the Queen Victoria Hotel at the V & A Waterfront. The menu is based on what’s in season in the area, with frequent variations in the menu. It makes me wish we could go back, again and again, to try what the chef creates next. Ingredients

Scale
  • 2 1/2 cups (325 grams) bread flour
  • 1 cup (50 grams) wheat bran
  • 1 2/3 cups (225 grams) whole wheat flour
  • 1 1/4 cup (100 grams) old fashioned oats
  • 2 teaspoons kosher salt
  • 1/2 cup (100 grams) olive oil
  • 1/3 cup (100 grams) honey
  • 1 packet (8 grams) active dry yeast
  • 1/4 cup (30 grams) walnut pieces, plus more for topping
  • 1/4 cup (35 grams) pepitas (pumpkin seeds), plus more for topping
  • 1/4 cup (35 grams) shelled sunflower seeds, plus more for topping
  • 2 1/2 cups water

Special Equipment:

  • Muffin Tins (these are AMAZING)

Instructions

  1. Combine flours, wheat bran, oats, and salt in a large bowl. Mix in the olive oil and honey until just combined and a few dry spots remain. Mix in the yeast.
  2. Stir in the walnuts, pepitas and sunflower seeds, followed by the water
  3. Spoon into a greased muffin tin, filling each one approximately level.
  4. Bake 350 degrees F for 50-60 minutes, until the outside is golden brown.
  5. Will keep for a few days in an air-tight container.
