One of the best meals we had in Cape Town was at Azure restaurant, which is part of the Twelve Apostles Hotel in Camps Bay. It was one of those lunches worth lingering over, with dish after amazing dish. Not to mention the view, perched on the side of their namesake Twelve Apostles, a string of peaks that extend from Table Mountain.
One of my favorite things about it was the mix of dishes with serious ‘wow factor’ like ostrich tartare, and comfort foods like chicken noodle soup. There’s truly something for any mood. It’s also pretty special to eat a Catch of the Day that was caught fresh right from the waters that the restaurant overlooks.
The Twelve Apostles is a part of the Red Carnation Hotel group. The owner of the group, Bea Tollman, is a true renaissance woman. In addition to successfully overseeing fabulous properties like the Twelve Apostles, Bea also spends time in the kitchen at each of her hotels, making sure every detail on the menu is perfect. She actually released a cookbook with some of the recipes, including this healthy chopped salad that we enjoyed at Azure.
Chopped salads are the best. The ingredients in this one are super flexible and you can add or take out things to suit your needs. Even though Bea uses endives, the ones at my local grocery store didn’t look super fresh, so I ended up leaving them out. No big deal. The recipe calls for bacon, but if you want a vegetarian version, and to make it even healthier, you can leave it out. I kept it in because, bacon.
For a little extra flair, I suggest tossing the salad at the table. You can chop everything in advance and keep it separated, then mix it up and add the dressing right before you serve it to your guests. You fancy.

Ingredients
[i]For the Dijon Vinaigrette:[/i]
- 3 teaspoons Dijon mustard
- 2 egg yolks or 2 tablespoons mayonnaise
- 2 teaspoons soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon Tabasco sauce
- 2 1/2 teaspoons lemon juice
- 1/2 teaspoon freshly cracked pepper
- 2 small garlic cloves, chopped or crushed
- 1/2 cup (125 ml) red wine vinegar
- 3/4 cup (175 ml) olive oil
[i]For the healthy chopped salad:[/i]
- 1 cup beets, peeled and quartered
- 1 cup fresh celery
- 1 cup romaine or butter lettuce, leaves thinly sliced
- 1 cup tomatoes
- 1 cup radishes
- 1 cup carrots
- 1/2 cup green onions
- 1 cup Belgian endive
- 1 cup avocado
- 6 strips bacon, cooked (optional)
Instructions
[i]Make the Dijon vinaigrette:[/i]
- Mix all the ingredients except the oils until smooth, then gradually whisk in the oil.
[i]Make the chopped salad:[/i]
- Bring a pot of salted water to a boil, add beets and boil until fork tender, about 20 minutes.
- Chop all vegetables finely, into approximately 1/2 centimeter cubes.
- Toss all ingredients together and serve with Dijon vinaigrette.

Thanks! You’re right, especially if you have a small container to take the dressing on the side, although I’m not picky so I don’t mind it when the lettuce has been sitting in dressing for a bit.
