Healthy Spinach Dip Endive Appetizers

Ingredients

  • 1 T. extra-virgin olive oil
  • 1/2 of a 10 oz. package frozen baby spinach
  • 1 garlic clove, minced
  • 1 1/2 cups plain 2% fat Greek yogurt
  • Kosher salt to taste
  • 20 Endives
  • 1/4 c. breadcrumbs or crushed croutons

Instructions

  1. Combine the oil, spinach, garlic, yogurt, and salt in a food processor and process until evenly mixed.
  2. Make your life really easy by using a piping bag or strong ziplock bag with a ~3cm hole cut in it to pipe the dip onto the endive boats. Or you can use two spoons to place a dollop onto each endive.
  3. Place the endive appetizers on a serving tray. If you are having trouble getting them to sit upright as I did, you can use a dab of leftover dip to “glue” them to the tray. Chill at least an hour before serving. Top each dollop with a pinch of breadcrumbs before serving.
  4. Note: the healthy spinach dip can be made ahead to cut down on prep time on party day!
