I spent my week in Cairns, Australia staying at the Pullman Cairns hotel. It’s just a block from the Esplanade, the boardwalk that lines the waterfront. It was also a block from where the pediatric cancer conference I was attending was held.

Even before I arrived in Australia, I had heard about High Tea at the Pullman Cairns hotel. In fact, I came across is multiple times – on Instagram looking at Cairns-related hashtags, on travel blogs and on TripAdvisor. It was completely coincidental that I had booked a room at the Pullman Cairns, but it made it so easy to make a reservation and try it for myself!

The Pullman Cairns has elevated the high tea experience to an art form. The restaurant is in their stately colonial lobby with high ceilings and elegant decor.

The dishes get carried out on 3-tiered silver stands and each plate is filled with decadent bite-sized treats. There were beautifully-done traditional offerings like finger sandwiches and scones and cream, but the chef had also added her own take with gorgeous savory and sweet bites. How fun are the little pipettes in the bubblegum-flavored ones?

I had a chance to meet Ashleigh Otto, one of the pastry chefs at Pullman Cairns. She actually just won the regional Nestl? Golden Chefs Hat Award (for up and coming junior chefs) and will be competing in their national competition. So cool!

High Tea at the Pullman Cairns would be a great group activity like a bridal shower or Mother’s Day brunch. If you find yourself in Cairns you absolutely have to check it out!
