I gave my classic no-bake cheesecake recipe a fun and decadent upgrade just in time for the holidays with this créme brûlée version. It has the crispy sweet crust of créme brûlée, but with the firm and creamy texture of cheesecake. It’s also incredibly easy and it’s such a crowd pleaser to light food on fire (intentionally of course!) before serving.

The just-sweet-enough wine pairing of choice for this perfectly sweet and silky cheesecake is Roscato Prosecco. This delicate bubbly hits it out of the park on every dimension. It has just a hint of sweetness, with a fruity fragrance and notes of citrus that won’t overpower your food.

If you are wondering what food to pair with Prosecco, you really can’t go wrong! Roscato Prosecco goes just as well with the charcuterie and cheeses leading up to the meal as it does with dessert. Easy Make Ahead New Year’s Eve Dessert
No-bake cheesecake is one of my favorite easy desserts. This one is entirely made in advance except for one important step – adding the sugar and brûlée-ing it! You’ll totally bring down the house (with excitement, not flames, ha!) when you get out the kitchen torch and light your dessert on fire. Other than that you can make them 1-3 days in advance, making them hassle free.
No-Bake Créme Brûlée Cheesecake
To make the créme brûlée crust, blot any condensation that has formed on the chilled cheesecake with a paper towel. Uneven texture is the enemy here, so make sure you scrape off any peaks that have formed. Sprinkle generously with sugar so no cheesecake is visible.
Make sure you wipe away any sugar or cheesecake on the rim of your ramekins as this will burn and be a pain to remove!
Use a kitchen torch to melt the sugar layer. This torch is a great one if you are just starting out. If you want a professional grade one, this torch is the one that all the professional chefs use. I have one and I love the control it gives. I also feel like a baddie when I use it. 🙂
The trick is finding the distance where the sugar melts but doesn’t burn. It might take a little trial and error. Move flame evenly over surface. If it starts to smoke, blow it out quickly and back off on the heat.
It probably goes without saying, but make sure you use ramekins or heat safe glass containers for this recipe. There are two suggestions below right above the recipe box.

Ingredients
For the graham cracker crust:
- 9 graham crackers, crushed (about 1 1/2 cups)
- 1/3 cup packed brown sugar
- 5 tablespoons butter, melted
For the no-bake cheesecake:
- 16 ounces (2 packages) cream cheese, softened
- 2 teaspoons lemon juice
- 1 pint heavy whipping cream
- 1/2 cup sugar
For the créme brûlée crust:
Instructions
- Combine the crushed graham crackers and brown sugar in a medium bowl, then stir in melted butter. Press mixture into the bottom of 4-6 ounce heat-proof serving dishes. Place in fridge to set for at least 30 minutes.
- In the bowl of a stand mixer, beat the cream cheese and lemon juice together on medium until no lumps remain. Add heavy cream and beat until thick, starting on low and increasing speed to medium, about 2-3 minutes. Scrape bowl, add sugar and beat on medium high until stiff.
- Spoon mixture over chilled crust and use a spoon to level. Chill at least four hours, up to overnight.
Créme Brûlée Directions:
- Do this part immediately prior to serving.
- Blot excess moisture from cheesecake prior to starting. Scrape off any uneven surfaces.
- Sprinkle with granulated sugar making sure no cheesecake is showing through.
- Hold the flame of your kitchen torch a couple of inches from the custard, making small circles to melt the sugar. It will start to brown and melt together. If it starts to smoke, you are holding the flame too close. Blow on it to cool, then continue. Wait a minute or two before giving them to your guests as the rim of the glass will be very hot.
