I haven’t been able to get this delicious chopped salad topped with salmon that I had during our stay at Chaminade out of my mind.Their awesome restaurant was delicious – definitely a highlight of our trip. We loved it so much, I actually reached out to them and requested the recipe! One of my favorite things about traveling is recreating the meals (and memories!) we have on our trips at home.
Since getting back from Santa Cruz, things have been crazy busy! Residency is done, but now I’m juggling working in the pediatric ICU with working at a local startup doing housecalls and still creating new recipes and posts for all of you. I have so many ideas for things I want to share with you I feel like they are bursting out of me!
Being busy means you have to pick your priorities. For me, doing errands is just not a priority. You probably know as well as I do that it’s easy to waste an entire day doing errands. A trip to the dry cleaners, a trip to the post office and two grocery stores later, poof. The day is gone.
I’m always looking for ways to streamline things – like grocery shopping. I had the chance to try AmazonFresh to get all of the ingredients for this salad delivered right to our door.
Using AmazonFresh was super easy. I placed my order on Thursday for the upcoming weekend and was happy to see the option for a 7-8am Saturday morning delivery. The early slots are perfect for my busy lifestyle as I’m much more likely to be at home to receive a delivery.
Having two days until my order, of course I realized I needed two or three more items to make my recipe. I thought I would be out of luck and have to place a new order, but I was delighted to see that I was able to add and delete things out of my cart as late as the day before the order was scheduled to arrive, with no additional charge to me. This happened three times. That’s three times that I didn’t have to waste time running to the grocery store. They offer same day delivery options too.
When the order arrived, it was divided into three containers – non-perishables, refrigerator items and frozen. The frozen items were packed with dry ice and were almost colder than when you get them at the grocery store. The salmon was absolutely incredible – and sushi grade! It was actually from a local company here in SF, the San Francisco Fish Company. As I was scrolling through the options on AmazonFresh I noticed quite a few local brands that I recognized. Out of curiosity, I price checked a few items. Some of their organic produce was actually cheaper than my local grocery store.
Because we already have an Amazon Prime membership, it was easy to upgrade to an AmazonFresh account. The combination of the two memberships is $299 annually and comes with free same day delivery on grocery orders more than $40. Doing the math for a year, an AmazonFresh membership means paying less than $4 per week to have someone go to the grocery store for us. 100% worth it.

Ingredients
Chopped Salad Ingredients:
- 4 cups butter lettuce
- 2 ears of white corn (about 1 cup frozen corn)
- 1 cup (4 ounces) diced granny smith apples (about 1 apple)
- 1 cup (4 ounces) blue cheese, crumbled
- 1 cup (6 ounces) heirloom cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded carrots (optional)
- 6 ounces Honey Lime Vinaigrette (recipe below)
Seared Salmon Ingredients:
- 1 tablespoon olive oil
- 12 ounces salmon fillets
- Salt and pepper to taste
Honey Lime Vinaigrette Ingredients:
- 2 tablespoons lime juice
- 2 teaspoons honey
- 2 teaspoon Dijon mustard
- ½ cup chopped cilantro
- 1 teaspoon lime zest
- 1 cup canola oil
- Salt and pepper to taste
Instructions
- Grill the corn: Peel the corn and place on a medium heated grill. Rotate every few minutes. Remove from grill when the corn is soft, let cool. If using an oven, preheat to 350 degrees Fahrenheit. Place the corn still in the husks directly on the oven rack. Cook for 40 minutes. Using a sharp knife, cut the corn off the cob and gently break apart.
- Make the Dressing: Add lime juice, honey, dijon mustard and cilantro to a blender or food processor. Blend and slowly add the canola oil and lime zest to create an emulsion. Season to taste with salt and pepper.
- Make the Salmon: Sprinkle both sides of the salmon with salt and pepper. Heat a sauté pan with a touch of olive oil and sear the belly side (or both sides if using skinless salmon).
- Preheat oven to 350 degrees Fahrenheit and place in a baking dish. Bake for 12-14 minutes. Salmon should be firm when finished cooking.
- Assemble the salad: Place the butter lettuce, grilled corn, apples, blue cheese, cherry tomatoes and avocado in a large bowl. Drizzle the honey lime vinaigrette over and toss to mix.
- Transfer to a serving bowl or plate. Sprinkle with shredded carrots. Place cooked salmon on top.

There’s no way this recipe is 1002 calories. I’m not sure what program calculates that but it must be wrong. Blue cheese may have some caloric content but overall your dish not only looks delicious and healthy but low in calories with the exception of the small amount of blue cheese. You may want to check that app you’re using.

I looked at the recipe and even though it’s healthy, it has a lot of good fats – namely the avocado and salmon. Even though the calorie content is high, the salad is meant to be a main dish and should be very filling. I think 6 ounces of salmon might be a lot for some people, so cutting down on that and also on the amount of avocado would definitely cut down the calories. I updated the recipe to reflect the recipe make 2-3 servings, so hopefully the calorie info makes more sense. Let me know what you think!
