Pistachio Goat Cheese Stuffed Dates

Hello, hello! I’m in such a great mood today for a million reasons. The biggest one is that I have an adventure coming up! I’m headed to Oregon this weekend to meet up with one of my best girlfriends from Wisconsin, Holly. We’re going to have a quick weekend in Oregon wine country and I’m so excited! I’ve been to Portland a handful of times, but this time we’re getting out of the city and exploring what else Oregon has to offer.

Pistachio Goat Cheese Stuffed Dates

I’ve been waiting to share these pistachio goat cheese stuffed dates appetizers with you for so long it’s almost criminal. The reason that they are part of my million reasons for happiness is that they are so good. They are also incredibly easy to whip up if you need a last minute party appetizer. You can also make them the night before and then sprinkle them with pistachios right before serving. As you can probably tell, they also make a great bite-sized snack. Since they’re made with Greek yogurt they are also on the healthy spectrum a well.

Holly is a professional photographer so obviously, our trip to Oregon is going to be well-documented. I can’t wait to share our adventure in Willamette Valley with you.

Ingredients

Scale
  • 2 tablespoons Greek yogurt
  • 2 ounces goat cheese
  • 14 dates, pitted
  • 1/8 cup chopped pistachios

Instructions

  1. In a small bowl, mix the Greek yogurt and goat cheese. The consistency will be fairly thick, like paste.
  2. Slice one side of each dates in half lengthwise.
  3. Cut the corner off a plastic bag and fill with the goat cheese mixture. Pipe the mixture into the dates.
  4. Sprinkle with chopped pistachios immediately before serving.

Tip: The dates can be made and stuffed the night before. Save the pistachios until right before serving as they will get soggy!

    I am assuming that in Instruction #3 you didn’t mean “blue cheese”, but rather just “cheese”…

      Your assumption is correct! I’ve made these both ways actually, with goat cheese and blue cheese. I’ve updated the recipe so this version is consistent. Hope you enjoy them! <3

    I think I have had these at an event but there was a bit of cumin mixed into the filling. Would that have been correct?
