It’s June, so I consider this the official start of summer. School’s out, people are talking about summer vacations and the sun is out so late! It’s also officially popsicle season.
These boozy peach sangria popsicles will satisfy your inner kid but they are still all adult. I mean, what better way to enjoy sangria than in popsicle form? Stone fruit is just coming into season so scoop up those peaches and enjoy them in this boozy treat.

Popsicles served in Prosecco have been blowing up my Instagram feed. There’s a bar in New York, Loopy Doopy, that has really popularized them but I felt like it was time to bring them to the blogosphere. Even though I haven’t had the NY version, let me tell you popsicles with Prosecco = next level $hit. Your Prosecco stays cold on those hot summer nights and ends up as a delicious sparkling cocktail with the bits of fresh fruit floating in it! So fun.
Recipe notes and tips: You’ll want an easy-to-drink fruity white wine for this recipe. I used a Cultivar Sauvignon Blanc and it was perfect! The crisp flavors and passionfruit notes pair perfectly with the peaches. The fruit I used are just recommendations, you can definitely mix it up with whatever is in season/you have on hand. Frozen fruit works just fine for this recipe.

Ingredients
- 1/2 bottle sweet, fruity white wine like a sauvignon blanc or riesling
- 1/3 cup peach schnapps
- 1/4 cup sugar
- 1 medium peach, sliced
- 1 cup blueberries
- Fresh mint
- Prosecco
Special Equipment
Instructions
- Mix the wine, peach schnapps and sugar in a pitcher. Stir until combined.
- Place the fruit and mint in your popsicle mold.
- Fill each mold with the white wine mixture.
- Insert popsicle sticks, leaving room between the bottom of the mold and the bottom of the stick. Freeze overnight.
- Remove popsicles from the mold and serve in a glass of prosecco!
