I love having recipes on hand that work just as well for a quick snack as they do for an appetizer, or even a meal. These flatbread pizzas are truly so versatile. As if being able to eat them for any occasion isn’t enough, they also take just minutes to put together.

Cooking with Lavash

If you’ve never cooked with lavash before, prepare to have your mind blown. You’ll seriously wonder how you ever survived using tortillas. Lavash is strong enough to hold up as a wrap, but still tender and moist. It’s night and day different from a tortilla – in the best way. They also work for so many more things than tortillas do. You can bake them to make chips for dipping, or turn them into a healthy pizza crust like I did. They even work to make paninis!

The secret is picking a high quality lavash that is made with care. California Lavash bakes real lavash using traditional baking methods. The taste that results from this time, patience and expertise is apparent with your first bite.

They are also vegan and have no artificial preservatives – this is real food with an ingredient list you can pronounce. Because they don’t have preservatives, they are best eaten right away or stored in the freezer until you’re ready to use them. I know salad-flavored pizza is probably not the first choice that comes to mind when you’re craving a slice. This lightened up version has just a bit of cheese baked on the crispy lavash and olives to add a salty kick. Fresh tomatoes replace tomato sauce and a sprinkling of feta is the perfect finish. Don’t know it until you try it!

Ingredients

Scale
  • 2 sheets California Lavash, each cut into four pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata (or similar) olives, pitted and sliced
  • 1/4 cup thinly sliced red onions
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400° Fahrenheit. Cut each pieces of California Lavash into fours.
  2. Place cut lavash on a baking sheet and bake for 5 minutes.
  3. Sprinkle mozzarella and feta on toasted lavash.
  4. Bake for an additional 13-15 minutes, until lavash is crispy and cheese is golden.
  5. Layer on romaine lettuce, tomato, olives, red onions and feta. Serve immediately.
