File this under things I love – putting a spin on a traditional recipe to make it more fun. You’ll see this technique all over A Side of Sweet – sushi burritos, taco rice, sushi pizza, and now….watermelon pizza! This might be my prettiest combo yet.
With summer’s bounty filling the farmer’s markets and produce aisles, there’s no better time to add fruit to your fruit. Top watermelon slices with some Greek yogurt and an assortment of fruits and you’re done. It takes just minutes to make and it tastes soooo good! It will be the perfect addition to your July 4th party or summer picnic.
Oh, a note about kiwi berries. I had never heard of such a thing, have you? Kiwi berries are cute little miniature versions of kiwis They are sweeter than a regular kiwi and you don’t have to peel them! You can just pop them in your mouth, or in my case slice them and put them on pizza! They were a total impulse buy at my local grocery store. I thought it fit in well with my ‘pairing of things that don’t belong together’ theme. You can add whatever you’d like to your watermelon pizza, including the regular old kiwis.

Ingredients
- 1 large watermelon
- 2 tablespoons thick plain or vanilla Greek yogurt
- Assorted fruits, such as:
- Strawberries
- Raspberries
- Blackberries
- Kiwi
- Oranges
- Coconut flakes (optional)
- 1 tablespoon honey
Instructions
- Slice watermelon in 3/4-inch thick rounds.
- Spread with a layer of Greek yogurt.
- Top with fresh fruit.
- Top with coconut flakes.
- Drizzle with honey and serve immediately.
