You really can’t go wrong with buddha bowls. The dish gets its name from the fact that you pile food (ideally lots of healthy veggies) up so it looks like Buddha’s belly. They are so dang delicious right out of the oven, but they also make excellent leftovers to take to work.

This recipe is for two buddha bowls, but I highly recommend doubling or even tripling the recipe so you can enjoy them all week long! It’s always great to have healthy leftovers to take to work. I’ll be the first to admit that attempting homemade sushi rolls sounds pretty intimidating. Not only are there all sorts of supplies to buy, but people train for years to become sushi chefs! Working with raw fish at home takes skill and expertise, and can be dangerous if it isn’t stored and handled properly.

Making vegetarian and vegan sushi rolls is a great way for beginners to ease into making sushi. The process is actually much easier than you might think. I’m all about root vegetables these days. Fall means potatoes and sweet potatoes are starting to come into season. Although I’m going to miss berries and stone fruit, something fierce, the versatility of sweet potatoes are a great consolation prize.

Sweet Potato & Black Bean Tacos

I can go weeks at a time without thinking about tacos, however it seems like every so often a switch flips and they are all I can think about. This recipe for smoky sweet potato and black bean tacos was the product of one of those cravings. I have to say, they hit the spot.

This recipe is healthy, vegetarian and easy. I also made it with things I had on hand, except for the microgreens! We always seem to have a stash of sweet potatoes living on our counter since they last forever. I spiced mine up with some infused chili pepper olive oil, but you could use your favorite hot sauce or some diced hot peppers if you so choose.
