Protein-Packed Chia Seed Granola

Vegetarian

Today I’m sharing my new favorite granola recipe for protein-packed chia seed granola on one of my favorite healthy recipe blogs – Rabbit Food For My Bunny Teeth.

Protein Packed Chia Granola

I’ve shared a lot of granola recipes and this is definitely my favorite so far. It’s delightfully nutty and packed with protein, fiber and omega-3’s. It’s the perfect way to start your day. Check it out on RFFMBT!

Wedding :: Getting Ready

I’ll share more about my hair in a separate post, but here are the photos from getting ready at Mansion Hill Inn in Madison, WI. Pat and I also spent our wedding night there. It is arguably the most romantic and luxurious hotel/inn in Madison. Because it is owned by the same company that Pat worked for in Madison, we got the employee rate! My bridesmaids (my four fabulous sisters-in-law) and I got ready there before the ceremony.

I had the good fortune of having two wonderful ladies get me ready for my big day. I worked with Anna Lutzke of Be Inspired Salon and Erin Helley, a make-up artist for Chanel. I cannot say enough nice things about these two! I felt so amazing and beautiful on my actual wedding, but now looking at the photos I really appreciate the magic that they did in transforming my face and hair.

All wedding photos were done by the fabulous Kinsey and Josh Mhire of Kinsey Mhire Photography and Sincerely, Kinsey.

Pat and I wrote each other love letters to read while we were getting ready. Reading these sweet words from Pat brought the first tears to my eyes of the day but at the same time settled my nerves!

I created these cards and wrote a note for each of my future sisters-in-law that I gave them with a pair of handmade earrings. I wanted something small to give them to say thanks for all of their help setting up and getting me ready. I’m so lucky to marry into a family full of amazing women. Speaking of amazing women, that’s my mother-in-law helping me get into my dress. She was absolutely my rock throughout the wedding preparations. She came to Madison and stayed with us the week leading up to the wedding. She kept me focused and helped out with all the last minute DIY’s that made the wedding so special! Our Wedding Photos - Bridesmaids Thank Yous - Kinsey Mhire PhotographyOur Wedding Photos - Mansion Hill Inn Madison WI - Kinsey Mhire PhotographyOur Wedding Photos - Mansion Hill Inn Madison WI - Kinsey Mhire PhotographyOur Wedding Photos - Mansion Hill Inn Madison WI - Kinsey Mhire PhotographyOur Wedding Photos - Mansion Hill Inn Madison WI - Kinsey Mhire Photography

Pistachio Olive Oil Mini Tea Cakes

Pistachio Olive Oil Mini Tea Cakes RecipePretty, pretty! These were almost too pretty to eat. Luckily, I got over that. As soon as I took the camera off the tripod these olive oil tea cakes were immediately devoured by Pat and I. Every. single. crumb. They are so easy to make, and when topped with crushed pistachios are little works of art!

Pistachio Olive Oil Mini Tea Cakes RecipeIn this recipe, the olive oil is the star. That being said, it’s important to choose a high quality product. I love Melina’s. Their Extra Virgin Olive Oil comes from old orchards in the Kalamata region of Greece. It’s bottled in San Jose, California, which is just a hop skip and a jump away from us here in San Francisco.

Pistachio Olive Oil Mini Tea Cakes RecipeThis recipe is originally from Farm to Table Geek’s but I came across it on the wonderful White on Rice Couple Blog. It originally called for crème fraîche but I swapped out greek yogurt, which I had on hand. Added bonus – it’s healthier!

Wedding :: First Look, Part II

I’m not sure how I came up with the idea for having a swing for our wedding photos. It came to me one day, and when I talked to Pat about it he immediately ran with the idea. The swing that he designed was beyond anything I could have hoped for! I was blown away by how well it all turned out.

All photos our by the fabulous Kinsey and Josh Mhire of Kinsey Mhire Photography and Sincerely, Kinsey. They also did our engagement photos. Check out our other photos here.

Homemade Freezer Pops

Vegetarian

Congrats to Holly for winning Tuesday’s No Bake Makery cookbook giveaway! Check your email for details.

Homemade Freezer Pops - Easy to make, gluten free, healthy and kid-friendly!

Today’s giveaway is brought to you by an invention that blew my mind the first time I heard about it. Zipzicles are resealable baggies in the shape of freezer pops.

Ever since the smartie pantses at Zipzicles sent me a pack to try I’ve been going crazy filling them with everything from smoothies to ice cream! I filled a couple with your homemade ice cream mix that is still soft from the ice cream machine. I filled a few Zipzicles with strawberry ice cream. Perfect for portion control!Zipzicles Homemade Freezer Pops Recipes

This recipe is more of a non-recipe. I made a mixed berry smoothie and poured half of the mix into Zipzicles to enjoy later!

Wedding :: First Look, Part I

I’m so excited to finally have the wedding photos organized and ready to share with you! We had the majority of our photos taken before the ceremony. This was important to us because we wanted us to be able to join our guests soon after the ceremony and have time to hang out with everyone before dinner!

We took our ‘first look’ photos at the site of our ceremony – Olin Park in Madison, WI. Olin Park is this beautiful place of lush greenery and towering trees situated right on Lake Monona. There is a pavilion available for rent from the city which was an old barn that has been fixed up for events.

I was about 90 minutes late for our first look – the product of having to set up the entire venue ourselves (no wedding planner or staff on our budget!) and also having six ladies getting hair done and dressed. I think Pat started to sweat a little! Better late than never, right?

Our wedding photos were done by the fabulous Kinsey and Josh Mhire of Kinsey Mhire Photography and Sincerely, Kinsey. They also did our engagement photos. I cannot say enough nice things about the Mhires! It was absolutely wonderful working with them. They are so professional and kind and put us right at ease. They really captured our day and our love in a way that exceeded my wildest expectations!

Expect to see a ridiculous amount of wedding photos over the next few weeks. It was just too hard to narrow things down. Hey, it’s my blog so I’ll share photos if I want to!
